Spring Greens, Salmon & Herby Yoghurt Bowl

🌿 Ingredients (Serves 2)
2 salmon fillets
1 cup steamed new potatoes (halved)
1 cup asparagus
2 handfuls mixed greens (spinach, rocket)
½ avocado
1 tbsp olive oil
Herby yoghurt:
3 tbsp Greek yoghurt (or coconut yoghurt for dairy-free)
Fresh dill or parsley
Squeeze of lemon
Pinch sea salt
👩🍳 Method
Bake salmon at 180°C for 12–15 minutes
Steam asparagus and potatoes
Assemble greens, potatoes, and avocado
Top with salmon
Spoon over herby yoghurt and drizzle olive oil
